Holly Clegg, the “Queen of Quick,” is a best-selling cookbook author who knows how to keep things sweet and simple. She’s teamed up with the American Chemistry Council’s Plastics Make it PossibleSM campaign to offer helpful tips and recipes to make your summer entertaining a breeze.

Start with Simple Recipes

For this tropical dessert pizza, make the cookie crust the day before. Mix the filling and store it in an airtight plastic container, then cut up fruit and store in individual resealable plastic bags. Be creative and substitute your family’s favorite fruits. Kids will have fun arranging the sliced fruit on this yummy dessert pizza!

Three ingredients plus three minutes equals one tasty marinade. Let the kids help pour the ingredients into a resealable plastic bag to flavor juicy pork tenderloins with a subtly sweet, spicy marinade.

The combination of crisp watermelon, juicy tomatoes and fresh basil with balsamic vinegar creates a fantastic and refreshing light salad. Just cut up ingredients and store in separate plastic containers, then toss together right before the party to keep the flavors fresh.

Simply Entertaining

For picnics on damp ground, placing an inexpensive plastic tablecloth under a blanket helps keep dampness from reaching picnickers – and keeps your blanket cleaner, too.

Wash, chop, measure and prepare your ingredients 1 to 2 days before an event or party. They can be stored in resealable plastic bags or airtight containers in the refrigerator to make putting together recipes much easier the day of the party.

Save plastic grocery bags to send guests home with leftovers. Placing an empty plastic grocery bag in a picnic basket is also a great solution for collecting trash after a picnic in the park – it doesn’t take up much room and will act as a waterproof barrier to prevent spills.

Create a dipping station for barbeque and grill sauces using reusable plastic storage containers with lids. Guests can spoon sauces onto their plates; when the party is over, simply place the lids back on the sauces and store in the refrigerator. They come in all different shapes and sizes and even fun colors.

Use resealable plastic bags for marinades. Put meat in the bags with marinade and refrigerate overnight. It helps save space in the refrigerator and clean up is easy. This also works for coating and breading.

Plastics Make it Possible(SM) Survey Reveals that in Today's Economy, Americans Are Cooking More Meals at Home and Eating More Leftovers

ARLINGTON, Va., Feb. 2 — In today’s cost-conscious economy, consumers are making choices to help them stretch every dollar. When it comes to eating, this can mean cutting back on dining out, eating smaller portions, reusing leftovers, buying in bulk and making an extra effort to reduce food waste.

In fact, nearly two-thirds of Americans indicate they have changed their food consumption patterns because of the economy, and 80 percent of Americans say their families make a point of eating leftovers to save money, according a recent survey conducted on behalf of Plastics Make it Possible(SM), an initiative sponsored by the plastics industries of the American Chemistry Council. Other findings from the survey show that 72 percent of Americans pack lunch for themselves or their children, and 94 percent of Americans feel good when they store and reuse food rather than throwing it away. Women are more likely to eat leftovers for lunch, bring home leftovers from restaurants or parties, and make large meals to extend over several days.

“I think what we’re seeing today is very much a ‘back to basics’ approach when it comes to meal time,” said Steve Russell, vice president of the Plastics Division for the American Chemistry Council. “Times are tougher so Americans are taking home leftovers from restaurants and cooking more meals themselves. Proper storage of fresh food and leftovers goes a long way to helping ensure consumers get the most out of every meal.”

Following are some simple storage and preparation tips that can help reduce or extend food budgets:

Store and eat those leftovers! There are so many ways to use leftovers – from ready-to-eat lunches to creating new meals from leftover ingredients to freezing them for later use. Storing leftovers in air-tight plastic containers can help keep them fresher longer. Transfer restaurant leftovers to sealed plastic containers as soon as you get home. If you won’t be able to eat your leftovers within a few days, immediately transfer them to plastic containers or sealable bags that are made especially for the freezer.

Cook once, eat for a week! Planning meals in advance can help save money and precious time. About four in five Americans said that plastic food containers and plastic wrap have made planning family meals easier. With the help of airtight plastic bags and containers, it’s easy to prepare and conveniently store an entire week’s worth of meals at once. This helps planners to purchase ingredients when they’re on sale.

Pack your own. Packing lunch instead of eating out can save money, and the wide variety of plastic bags and containers available today don’t just keep food fresh, they can help control portion size, which is important when trying to lose or maintain your weight. In fact, 56 percent of Americans say they are looking for products that help them practice portion control. And for those who are battling the bulge or just trying to eat healthy, there are also new plastic containers and wraps that are designed to keep fruit and vegetables fresher even longer.

The survey was conducted by TNS Global in September 2009 to a nationally representative sample of 1,000 American adults aged 18+.

One of the most economical ways to enjoy food year round is to purchase food in bulk when it’s in season and store it in your freezer for later use. Of course, you can’t just put your food in the freezer and hope for the best – proper storage is critical.

There are numerous reports that freezing temperatures this winter will mean higher prices for produce in the grocery story. The best weapon in the fight against Mother Nature’s big freeze may be an appliance you already have in your kitchen!

One of the most economical ways to enjoy food year round is to purchase food in bulk when it’s in season and store it in your freezer for later use. Of course, you can’t just put your food in the freezer and hope for the best – proper storage is critical.

Plastic packaging can help food stay fresher longer because it offers an air-tight solution, which is a major factor in prolonging food freshness. There are many plastic storage options that are designed specially for the freezer so be sure to purchase packaging made specifically for that use.

Holly Clegg, Television host and author of the Trim & Terrific Cookbook series, suggests the following tips for freezer friendly meals:

Don’t overload your freezer. It is best to freeze no more than 2 to 3 pounds per cubic foot of capacity within a 24-hour period. If you need the space for storage, you can stack the food after it is frozen.

The temperature of your freezer should not go above 0ºF.

Freezing does not improve food quality—select only fresh, high-quality ingredients.

Some vegetables, including lettuce, tomatoes, cucumbers and watermelon, don’t freeze well because of their high water content.

Frozen fruit can be thawed partially at room temperature and is actually best when served with some ice crystals remaining. If the fruit is to be used in a cooked dish, use it directly from the freezer.

Frozen vegetables may be cooked directly from the freezer, but cooking times should be only one-half to two-thirds as long as times for fresh veg. Don’t overcook.

Frozen fruits and vegetables can be kept for as long as a year.
